Between all the pastas, sugar, butter and pastries I cook, bake and eat, I feel I have to balance it with some fresh salad!
And if I'm going to have a salad - I wanna make it interesting, fun and refreshing.
I roasted some zucchini slices, and combined it with cooked chickpeas, lots of fresh herbs, squeezed lemon, a touch of chili and lots of olive oil. Delicious delicious delicious. And along with some Labane cheese(strained yogurt) and sliced almonds.. so good!
Ingredients:
2 large zucchini
A cup and a half of soaked and boiled chickpeas
A handful of mint leaves
A handful of coriander
1 small red onion
2-3 stalks of scallions
2 tablespoons sliced almonds
Half a teaspoon of chili flakes / chopped fresh chili
2 tablespoons Labane cheese(strained yogurt) - can also be replaced with feta cheese or sour cream
2 cloves garlic
One squeezed lemon
Salt
Black pepper
Olive oil
Preparation:
Finely chop a small portion of the coriander, u should have something like 2-3 tablespoons of chopped coriander. Mix with 3 tablespoons of olive oil, one clove of crushed garlic and a pinch of salt. We will use this oil for serving.
Heat a little bit of olive oil in a pan with one clove of garlic, black pepper and salt.
Slice the zucchini into strips that are not too thick, you can also cut the strips to a smaller size or leave it as is.
Roast the zucchini slices on the pan that has been heated with olive oil. One or two minutes on each side. It is recommended that the zucchini remain a little bit crispy and too cooked. Remove and place the zucchini on absorbent paper to soak up some of the oil.
Chop the mint leaves without the stems and the coriander with the stems.
Cut the red onion and scallions into thin strips.
Once the roasted zucchini strips have cooled, mix together with the chickpeas, onion and chopped herbs, one tablespoon of sliced almonds, lemon juice, chili, a tablespoon of olive oil, salt and black pepper.
Mix it well!
To serve - spread two tablespoons of Labne on a flat plate, add the salad, Sprinkle some more sliced almonds on top and drizzle a bit of the coriander oil we prepared in advance.
