Have I already mention that I'm addicted to Italian food?
So I decided to make an Italian-inspired doughnuts, mini ricotta and lemon doughnuts that will make you say Mama Mia !!
The recipe is very easy and quick to make, and the result is wonderful!
I will recommend frying the doughnuts just before the time you're planning on serving it, it's the best when it's still warm :)
Ingredients:
400g of all-purpose flour
10g of baking powder
3 eggs
250g of fresh ricotta cheese(unsalted)
125g of sugar
A tablespoon of lemon zest
A pinch of baking soda
Icing sugar
Preparation:
In a bowl, mix the flour, baking powder and baking soda.
In another bowl, whisk the eggs and sugar using a hand or stand mixer for 2-3 minutes.
Add the ricotta and lemon zest to the eggs and mix.
Add the flour mixture to the ricotta mixture and mix gently to combine the ingredients using a spatula.
Use a small scoop of ice cream (3.5cm in diameter) or by using two teaspoons, take a small amount of the batter and carefully put it into hot oil.
Fry it until golden on both sides.
Remove from the oil and place on a plate with absorbent paper.
Sprinkle icing sugar on top.
You can upgrade the doughnuts by adding a tablespoon of amaretto liquor to the batter.
And of course, it would be very nice to serve it alongside delicious homemade jam.
